One-Pan Roasted Chicken with Sweet Potatoes and Chickpeas Recipe
Here we are with our second recipe, the One-Pan Roasted Chicken with Sweet Potatoes and Chickpeas Recipe. This is another easy to prepare and cook chicken recipe for the chicken lovers out there. It’s a delicious and juicy chicken recipe without any extra oil needed. The oil from the chicken is all you need so you save up on the fats and calories there. 4-6 Chicken thigh pieces (or any piece you prefer)
1 tsp coarse salt
1/2 tsp black pepper
1/2 tsp cayenne pepper (optional)
1/2 tsp dried thyme leaves
2 pcs medium-sized sweet potatoes, cut in small cubes
1 can (400g) chickpeas, drained
1.Preheat oven at 200C for at least 15 minutes.
2.Place the chicken pieces (skin side up) on a baking dish and season each piece with salt, pepper, cayenne, and thyme.
(Optional: Use your hands to massage and evenly coat the chicken for best result)
3.In the same dish, add the sweet potatoes in the dish and arrange them evenly surrounding the chicken pieces. ***
4.Bake in the preheated oven for 30 mins.
5.After 30 mins, turn the chicken on the other side (skin side down) and slightly mix the sweet potatoes to coat with the juices.
6.Add the chickpeas. Make sure to spread them evenly as well, before baking.
7.Bake for another 20 mins.
8.After 20 mins, switch your oven setting to broiler mode at 250C.
9.Turn the chicken pieces (skin side up) one last time and broil for 5-10 mins.
10.Once chicken is cooked to your liking, transfer to a serving platter together with the sweet potatoes and chickpeas. Enjoy!

•If you prefer your sweet potatoes to still have a harder texture (not too soft), you can opt to add them with the chickpeas altogether on the second half of baking instead.
